What are the ingredients in your tortillas?
Almond Flour Tortillas: almond flour, tapioca flour, water, sea salt, xanthan gum.
Cassava & Chia Tortillas: cassava flour, water, coconut flour, chia seeds, coconut oil, avocado oil, apple cider vinegar, sea salt.

What are the ingredients in your tortilla chips?
Sea Salt Tortilla Chips: cassava flour, avocado oil, coconut flour, ground chia seed, sea salt.
Lime Tortilla Chips: cassava flour, avocado oil, coconut flour, ground chia seed, sea salt, citric acid, lime oil.
Nacho Tortilla Chips: cassava flour, avocado oil, coconut flour, ground chia seed, sea salt, citric acid, tomato powder, nutritional yeast, smoked serrano powder, citric acid, jalapeño powder, toasted onion powder, roasted garlic powder.
How do you choose your ingredients?
We have gone to the end of the Earth to find the best ingredients for our tortillas. The almonds, avocados, chia, coconut, and cassava that go into them have been selected to best exemplify how these ingredients should be grown and used in food. In order to accomplish this, our products have been sourced with three objectives in mind:
•Accessibility: At Siete we believe that all people should be able to enjoy Mexican meals. We've designed our products to allow people with a variety of diets, dietary restrictions, and backgrounds to gather around the table.
•Integrity: The ingredients that we source have been chosen to preserve the purity and natural essence of our products. We care about what we put in our bodies and, because of that, we've gone to great lengths to create a natural and healthy product that we would eat ourselves and feed our friends and family. You will not find chemical flavoring additives or genetically modified ingredients in our tortillas.
•Taste: We want our tortillas to be the best-tasting, I-didn't-know-it-was-healthy, mind-blowingly-delicious tortillas that you've ever eaten. We're constantly in the kitchen, taste testing new ingredient options, and fine tuning our recipes to take you to tortilla nirvana.
Long story, short: when you bite into a Siete tortilla you should be proud of what you're eating, be able to eat it—guilt-free—and you should love the taste so much that you tell all your friends, or at least scream to the heavens.

To be clear, this isn’t to claim specific health benefits–we’re not scientists or dieticians–but to present the existing research and give you all a window into the thought process underpinning our use of these ingredients.
What is Xanthan Gum, and why do you use this ingredient?
Xanthan gum is an emulsifier derived from Xanthomonas campestris, a bacteria. The bacteria is fed a sugar derived from corn, soy, sugar cane, beets, or wheat.
Xanthan gum is a refined product, and should be free of protein, but some individuals allergic to the foods above have reported reactions to xanthan gum. Those with an intolerance or a less-sensitive allergy may be able to consume products containing xanthan gum without becoming symptomatic, so products that contain it should not automatically be ruled out.
What is the carbohydrate source of your Citric Acid?
While we always strive to source citric acid derived from non-gmo sugar cane and beets, we cannot guarantee sugar or beets will always be the source, as our suppliers may change.
What is cassava?
Cassava is a tuberous starchy root (like potatoes or yams) native to Brazil and other tropical areas of the Americas. As a tuberous root vegetable, cassava is gluten-free, grain-free, and nut-free, as well as paleo-friendly.
Because our producer uses the entire cassava root in the milling of the flour, there is occasionally toothsomeness or grittiness in our cassava base tortillas. When searching for the perfect cassava flour, we opted for a greater variety of texture in order to retain the root's high-fiber content. The milling of super-fine cassava flour results in the loss of the diverse nutritional profile that makes cassava such an attractive option in the first place.
Are Siete Tortillas paleo-friendly?
Yes. The principles of a paleo diet are to eat real, nutrient-dense foods, and to avoid foods that cause inflammation. All of our ingredients are commonly recommended as part of a paleo diet.
I'm vegetarian/vegan, do you use animal products in your tortillas?
Siete tortillas, as well as our tortilla chips, are super-duper vegan.
But I heard you use lard?
Our Cassava & Coconut tortillas originally used pastured pork lard as an homage to the homemade flour tortillas our abuela made in her kitchen. Fortunately, you all bought a lot of them! Unfortunately, finding farms that produce enough of the high quality pastured pork lard we insist on became a challenge.
When we were asked to make food service tortillas in 2016, we began experimenting in the kitchen. Eventually, we discovered that a re-formulation of the recipe for the Cassava & Coconut tortilla—in which coconut oil replaced the pastured pork lard—stood up to the demands of food service and was an equally delicious alternative to the original. Going forward, we'll be using that recipe for our Cassava & Coconut tortillas.

I have a nut allergy. Can I eat your product?
Our products are made with tree nuts (almonds and coconuts, respectively). If you're seriously allergic to tree nuts, then our products aren't for you. You're a beautiful person, and the world needs you around longer, so don't eat our tortillas or tortilla chips. Every individual's allergic reaction is different, and we advise you to consult with your doctor before eating products made from almond flour or any other nut.
Are there any GMOs in your products?
No! Our products have all been verified by the Non-GMO project.
Are your products organic?
Our products are currently not certified organic. We source only the highest quality ingredients for our grain-free tortillas, and we will be pursuing organic certification as soon as possible. We already use as many organic ingredients as we can source.
Are your nacho flavored chips dairy free?
Yes! We like to make things more difficult for ourselves, so we thought, "Why not make a cheese flavored chip, without cheese?"
How long do the tortillas and tortilla chips keep?
Our products are 100% preservative-free, so they don't do well sitting out on the counter like preservative-soaked conventional flour tortillas. If you're going to eat the tortillas within a week or so following purchase, then refrigerating them is perfect. If you're not hungry for tortillas right now, or if you're stockpiling them for a zombie apocalypse, then they'll last even longer in the freezer (three months). And send us your latitude and longitude, in case we need to find you in the event of the zombies.
Our chips will be best before 150 days after production, long enough to still be good after you hibernated through the long winter.
What are your freezing/thawing recommendations?
If you're saving tortillas for the long winter, or just past the first week of purchase, they should be stored frozen (they will last three months in the freezer). We recommend thawing them in the refrigerator, and they may be refrigerated up to 7 days. When refreezing we’ve found using parchment paper or a similar separator is helpful in keeping the tortillas from sticking together. We would not recommend freezing tortilla chips.
What is the best way to heat up my Siete tortillas?
Our tortillas are best heated on a griddle set at medium to high heat for about 15 seconds per side. You can use a microwave, too. We have yet to test the following heating implements: arc welders, flame throwers, active volcanos, lit marshmallows, or Superman eye-lasers. If you use any of these implements, please send pictures.
Do the tortillas hold up to salsa and other fillings?
Our tortillas laugh in the face of salsa sog. ("Bwahahaha!" they say.) We have loaded up our tortillas with all sorts of toppings and fillings, and the only thing that has defeated our tortillas is our mouths. Our intrepid tortilla engineers are always testing Siete amazing grain-free tortillas in extreme conditions: in a wind tunnel, in zero gravity, in a submerged shark cage, and buried beneath a platter-full of enchilada sauce. In every instance, the tortillas have prevailed.
When will you be available in my city?
We are rapidly expanding our distribution to meet the overwhelming demand for our food. Today, we are available in Whole Foods Markets in most states, as well as a growing number of natural grocery stores. If your products of choice are not already available in your neighborhood, we'd be delighted to have you order them on this very website and we will ship them straight to your door!

My local Whole Foods keeps running out of your product. What do I do?
First, thanks for letting us know! We will reach out to the store to ensure that our products are adequately stocked on the shelves. Our products often sell faster than store buyers anticipate, so stores often don't order enough. The next time you're in the store, please ask for the "refrigerated or dairy grocery buyer," and encourage him or her to make sure that your favorite Siete products remain in stock!
How long will it take to ship the product to me (online orders)?
In order to maintain freshness we ship our tortillas Monday - Wednesday in a box with ice packs and a recyclable liner. Orders received after 8AM on Wednesday will be shipped the following week.
What is your return/refund policy?
Because this is a perishable product we do not accept returns. We are 100% committed to customer satisfaction and offer refunds and/or replacements on a case by case basis. Refund/Replacement requirements are: Description of product, lot number, and photos of product and packaging.
